Spring Caramelized Pea Potstickers | Blogger Collaboration

Spring is here! I'm so grateful to have been asked to collaborate with fellow food-bloggers, although I don't know if I really consider myself a "blogger" per say. The theme was to come up with a pea inspired recipe for Spring and since Corey and I just got back from Asia I figured what better way to celebrate this collaboration than with little dumpling potstickers! I used wonton wrappers filled with peas, caramelized onions, ricotta, parmesan, mint, and some seasonings then baked them and whipped up a Green Goddess dressing to dip them into. This recipe is fun, fresh, and perfect for a Spring soreé! Works for Easter too!

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

In a skillet, add 1 tablespoon olive oil and thinly sliced onions over medium-low heat and cook, stirring frequently, about 8 minutes. Add 1 teaspoon sugar and 1 tablespoon water and continue cooking until onions caramelize, about 10 minutes more. Set aside and allow to cool.

In a bowl, add caramelized onions, ricotta, parmesan, sweet peas, mint, salt, pepper, and garlic, until fully combined.

Fill each wonton wrapper with 1 teaspoon of the ricotta pea mixture.

Dip your fingers into a bowl of water and wet the edges of the wrapper with water. Fold the wonton in half in a triangle shape. Press the edges together well to seal the ends.

Bring the two corners of the wonton together to meet in the middle and seal them with a little water. You wonton will look like little hats. Place them down on a parchment-lined baking sheet without touching in a single layer.

Bake in the preheated oven for 10 to 15 minutes, or until they are golden brown and crispy. Serve hot with a side of Green Goddess Dressing.

Spring Caramelized Pea Potstickers with Green Goddess Dressing

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Yield: about 45-50 potstickers

Ingredients:

1 tablespoon olive oil

1 onion, thinly sliced and caramelized

1 teaspoon sugar

1 tablespoon water

3/4 cup ricotta cheese

1/2 cup parmesan cheese

1 cup sweet peas (frozen works)

1/4 cup fresh mint, minced

1 teaspoon salt

1 teaspoon pepper

1 teapsoon garlic powder

1 package wonton wrappers

Green Goddess Dressing:

1 avocado

1/4 cup mayonnaise or full-fat greek yogurt

1 teaspoon Dijon mustard

1/2 cup water

1/4 cup fresh basil

1 lemon, juiced

1/2 teaspoon salt

1/2 teaspoon pepper

Directions:

Meanwhile, prepare the Green Goddess Dressing. In a blender, combine avocado, mayonnaise, mustard, basil, lemon, salt, and pepper until fully mixed together. (If needed add 1 tablespoon water at a time to loosen the dressing)

Serve potstickers hot with a side of Green Goddess Dressing.
