Banana Split Skewers | Healthier Sweet Option

Let's face it, we all crave a Banana Split type of dessert every now and then (and it's ok too if you crave it every night, I'm not judging). Instead of feeling guilty over making your way to the dessert table, I've created these Banana Split Skewers, so you could participate in the sweets party and not feel so bad about it. Go ahead add some whip cream to the top too, if you really want to go all out! I'll be right there with you and you best believe that.

Banana Split Skewers

Prep time: 5 minutes

Active time: 10 minutes

Cook time: 5 minutes

Total time: 20 minutes

Yield: 24 fruit skewers

Ingredients:

2 bananas, cut into 1" pieces 24 1" pieces pineapple 12 large strawberries, rinsed, dried, and halved 2 cups chocolate chips

1/2 cup peanuts, chopped (optional) 1/2 cup shredded sweet ended coconut flakes, (optional)

Directions:

For kebabs: Thread two pieces each banana, pineapple, and strawberry onto skewer. Repeat process to assemble 23 more skewers. Place all on parchment- lined baking sheet.

Make a double-broiler: In a saucepan add 1-inch water and bring to a boil. Place a bowl over the pan and add chocolate, stirring until melted. You can also use the microwave to melt the chocolate in 30-second intervals, stirring in between, until completely smooth.

Drizzle chocolate over fruit skewers and top with chopped peanuts and shredded coconut flakes. Freeze until ready to serve.
